Power Up with this Easy Recipe for Protein Pancakes

We could all use more pancakes in our lives. Sadly, the world is an unfair place so eating pancakes on the regular isn’t always the best idea for your health, or your waistline. But fear not, where there’s a will, there’s a way and this healthy version could just be a way to bring more pancakes into your life! They’re vegan as well as gluten, dairy,  sugar … and guilt-free! Whether you’re looking for a treat after a tough workout or just want something healthier to satisfy a sweet craving, these protein pancakes are the ultimate post-gym delight.

Made using tapioca flour and protein powder instead of regular flour, these simple protein pancakes are packed with good-for-you ingredients.

Ingredients:

(Serves 4)

1/2 cup tapioca flour (buy it online here)
1/2 cup Phyto Pro Pea Protein Isolate protein powder (Buy it online here)
1 tbsp ground flaxseed
1 1/2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp Himalayan Crystal salt
1 cup unsweetened almond milk
1 banana, mashed OR 1 apple, puréed
2 tbsp honey or maple syrup
1/2 tsp vanilla powder
coconut oil for cooking

Method:

In a bowl, combine tapioca flour, pea protein powder, flaxseed, baking powder, cinnamon and salt, and mix well.

Combine the rest of the ingredients in a second bowl. Slowly add half of this wet mix into the dry ingredients and stir continuously. Add the remainder of the wet ingredients little by little to avoid a runny batter, mixing well after each addition.

Add a little coconut oil to a griddle or pan and melt over a medium heat.Pour around 1/4 cup each of batter into the pan and cook for 2 – 3 minutes until bubbles begin to form on the surface. Flip and cook for another 2 – 3 minutes.

Repeat with the remaining batter.
